Peanut Butter Cup S’mores Bars

WARNING: This post is going to be 97% rant and 3% delicious baked goods.  It’s my blog and I can rant when I want to.

It’s kind of a rite of passage into adulthood that at some point in your grown-up years, you have a really terrible landlord.  But I’ve said it once and I’ll say it again…my landlord is pretty much the WORST.

Exhibit A: The other day my roommates and I got locked inside our apartment (HELLO fire hazard) because our doorknob fell off.  Just a casual turn of the handle and *pop!*…bye bye doorknob, bye bye ability to open door.  So we’re locked in our apartment imagining all the ways we’re going to die and trying not to use up all the oxygen as the walls slowly close in on us and we think, who can help us get out of this pickle?

Our landlord, right?

Wrong.  Though she lives one floor below us, we are NOT allowed to call the landlord.  For any problems, whatsoever, periodendofstory.  It’s even part of our lease agreement!  Locked in your apartment?  Tough.  Hot water stops working?  Too bad.  Raccoon burrowed in your bedroom wall?  Deal with it.

Luckily we have a back door and were able to escape, praise Jesus.

Exhibit B: I recently received an IRATE phone call from Landlady Extraordinaire because we’ve apparently been shortchanging her on rent each month.  Which would typically be a big deal, but…

Try to guess how much we’ve been shortchanging her by.  Seriously, guess!  Bet you can’t.


A penny!  One cent!  1/100th of one dollar!

I get it.  Times are tough.  But lady?  Even if we shortchanged you every month for 2 years, you wouldn’t even be missing a QUARTER.

So obviously we stuck an envelope of pennies underneath her door with this month’s rent.  We really know how to do the mature thing.

Exhibit C: She threatened to call the police last month because she heard the guys who live across the hall swearing.  Seriously!  Can’t make this stuff up.  I live in an orphanage.

Luckily I have the coolest apartment with the best natural kitchen light in all of Brookline, which totally makes up for my mean old landlady.  But you better believe I am NOT sharing my baked goodies with Cruella de Vil anytime soon.

None of that had to do with peanut butter cup s’mores.  But these bars?  They combine my two ALL-TIME-FAVORITE baked goods and are the new *!*!*Best thing I’ve ever made!!*!*!  I’m never eating a s’more sans peanut butter cup or peanut butter cup sans s’more ever again.  Cross my heart hope to die.  Peanut butter cup s’mores are life.

Peanut Butter Cup S’mores Bars (adapted from Pinch of Yum and Sprinkle Some Sunshine)

yield: 16 large/20 small squares


  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs
  • 16 peanut butter cups, regular size
  • 1 1/2 cups marshmallow fluff*

*Fluff is pretty impossible to measure, so this doesn’t have to be an exact amount, just kind of eyeball it. As long as you have enough to cover the PB cups, you’re good to go.


  1. Preheat the oven to 350 degrees.  Line an 8×8 baking dishing with parchment paper; coat lightly with cooking spray.
  2. In a large bowl of the bowl of stand mixer, beat butter and sugars until fluffy.  Beat in egg and vanilla until combined.  Scrape down the sides.  With the mixer on low, stir in the flour, baking powder, salt, and graham cracker crumbs until mixed.
  3. Spread 2/3 of the dough on the bottom of the prepared baking dish.  Lightly press the peanut butter cups into the dough, then spread marshmallow fluff on top.  Press the remaining dough on a non-stick surface into the shape of an 8×8 square.  Place the square on top of the fluff and press down lightly.
  4. Bake for 30 minutes or until the edges just begin to brown.  Allow to cool for at least two hours* to give the bars a chance to set, then remove from the pan and cut into squares with a large, sharp knife.

*Originally I said the bars needed to cool for 8 hours, but after making them again I’ve realized they’re ready to go after only about 2. I also bet they are DAAANG good straight from the oven 😉

      Haha! We’ve now started giving her an EXTRA penny each month, just to see how it long it takes to “really screw up” (the main argument in the irate phone call) her bookkeeping, which of course will be never because it’s a PENNY. #passive #aggressive

I thought I had the worst Little Old Nazi Land Lady (throws my mail away, tried telling my movers (who were Irish and she called Micks) to take their shoes off each time they entered the apartment with another load…and on and on).     I had a landlady like that once. She would call us and SCREAM into the phone if we were seconds late on our rent. Also, her son was actually the landlord but she didn’t trust him when it came to business matters.

        Actually, what we used to do in university is hide in a house across the street, like, in an upstairs room, and leave the window open. Then, when the landlady would be going to her car, we’d yell down at her about how the proletariat won’t stand her bourgeois ways. Conversely, we’d be potato farmers yelling at her about “takin’ our lands away.”

        She was always confused, and never knew where the yelling was coming from, and we felt better.

      I make these GF by using Jules nearly normal GF flour and Kininnick graham cracker crumbs. They were the hit of my neighborhood party (by all gluten eating peeps and all!!!)

    honestly, someone like her would probably benefit the most from a gift of baking…she is such a witch to everyone and people like that are often lonely and depressed…rock her world by doing something nice…and even if you dont see a difference you WILL have made one 🙂

    That is so ridiculous, a penny. I have been pretty lucky, I have had pretty good landlords. The best ones I had I was a single mom, and my Landlady and her husband were so good to me, they took care of everything. I even asked if I could have new carpet and have the place painted and did it almost right away, I lived in a real nice mobile home park (lived there for 9 yrs) but they had got a brand new 4 bedroom, huge mobile home. I asked if I could have it, and they said no problem..I loved them, unfortunately she passed away from cancer 2 yrs ago.. And I can’t wait to try this recipe, looks sooo good!!!!

    A similar thing happened to me years ago in an apartment I was renting, except the door was the bathroom door. Something broke inside the handle when I turned it, so it wouldn’t disengage the latch. Of course I had left my cell phone in my bedroom and no one else was home. Luckily my closet was attached to the bathroom and I had a little toolbox in there and I was able to pry the door knob off with a screwdriver. It was a little scary!

    I had a landlord once that was a total jerk. I can’t even begin to tell you all the violations he was guilty or the many problems. But pretty much everything from electrical to plumbing, fire detectors to squirrels in the walls. He would never talk to me, if he did he talked down to me. Just because I was a stay at home mom of 4 doesn’t mean I was stupid. I can’t tell you all of the fun times, but here is one towards the end of our relationship with him.

    We rented a big old Victorian house from him with a shot gun entrance way. The front door had a beautiful full length glass oval that I didn’t cover with a curtain. He knocked at the door and he could see me making dinner in the kitchen at the rear of the house. I told hubby the jerk was at the door. I continued making dinner. Why my hubby didn’t “run” to the door I don’t recall, but I went looking for him. Big house! As I got close to the front door Dr. Jerkface (yes,he was a doctor) starts yelling at me through the door. “Why don’t you answer the bleep bleep door? You can see me right here!”

    I calmly looked at him and said, “Why would I do that? You don’t respect me or even talk to me. So, I am not going to waste my time on you. Also, we don’t use that kind of language.” And turned and walked away.

    He lived right around the corner from us. I wanted to put a flaming bag of dog poop on his porch or the beans I let soak too long in the hot Georgia summer, but hubby said no. boy, those beans really smelled!!!

    My husband who was one of the directors at the hospital was called into the hospital administrator’s office one day shortly after this. He informed my DH that Dr. Jerkface was being run out of town by him personally and since he had heard we were living in his rental house we might take comfort in knowing this. Yes, we did! Not as satisfying as burning poop or nasty beans, though. Sometimes you just want to turn to the dark side!

    Yes you have more rights than you probably think. I have dealt with a slumlord or 3 and she has to fix that, if you have a leak or hot water tank stops working she has no choice but to fix it. Shes crazy to think she don’t I would definitely share a copy of that link specifically what the landlord must do. I didn’t look at your states but I know mine and a landlord cannot tell you whether its in lease or not that you cannot call her for no reason. This is probably the same in all states you can give your landlord notice (30 days) to make any repairs or rent will be with held, now here you have to open an escrow account with courts to cover your own butt, if she dont make the repairs you keep putting money in escrow she cannot evict you she is violating laws. It would be considered retaliation. Its amazing what some of these landlords think they can do, no offense but especially some of the foreign ones.

      Yeah, I found it to be pretty sticky as well. I pretty much just mushed it around on a piece of waxed paper until it was about the right size. It might help to spray a little bit of cooking spray on your hands before attempting to press it down.

        Try this. Trace the 8×8 pan onto wax or parchment paper. Turn it over so the ink or lead wont transfer onto your dough. Plop the dough onto the center of your square after lightly spraying the paper with cooking spray. Cover with a second sprayed sheet placed spray side down. Use your hands or rolling pin to press into shape. Peel off top paper, invert onto the pan, and peel off bottom paper. If need-be, tap down into place with your fingers. (Hope it helps!)

    My landlord’s a giant Samoan dude, and he tried to beat up my roommate’s boyfriend and break into my other roommate’s bedroom. We called the cops both times, and the second time they came, they started poking around the house and they thought the mirror in our bathroom was a two way. I’d take this mean lady who wants some extra pennies any day.

    I made these today and found that its impossible to measue Fluff as its just too sticky and I could NOT get the dough for the top into the right size. Still delicious though!

      Linda – next time try tracing the outline of your pan onto a sheet of parchment paper, put your dough in the middle of your outline, and press away! That should give you the right shape!
      I am totally making these tomorrow. YUM!

    I made these today and they’re the best cookie of all time! ALL TIME!!!

    After I tore the 8″ off the parchment paper roll, I just folded it in half, cut it, and I had half for the bottom of the pan, half for rolling out the top. I smooshed out the top part on the parchment paper and then rolled it with a rolling pin the rest of the way. I flipped it over on top of the rest of the cookie bar and it was a beautiful square that fit just right!

    I just threw up a little looking at this disgusting concoction. What are you, twelve? Jelly beans with frosting must be next. But anyone dumb enough to put up with this sort of ridiculous treatment from a landlord really can’t be held to any standard for normal people. And all because the “kitchen has great light?”. By the way, YOU DID NOT PAY HER THE FULL RENT DUE. I don’t care if it was one penny or 99% of the rent. Failure to pay the rent in full is an evictable infraction. Moron. I’ll buy your car for $100,000, but it appears you should be ok if I short you by any amount I feel isn’t a big deal. It’s not up to you, is it, just because I owe you the money? What really gets me is that you blame someone else for your own stupidity. Next time the doorknob falls off, eat the raccoon. It’ll be better than your baking.

    Awesome blog! Found it through Pinterest and absolutely love all of your recipes! I am 26 days into a 40 day no sweets/dessert bet with my husband. I can’t wait to eat these! I made them this weekend for my husband’s grandmother and she loved them! I can eat sweets again June 7 and plan on making these the night before and eating them for breakfast!

      Hello! I was able to fit 4 peanut butter cups down and 4 across in an 8×8 pan. They were a little smooshed but they all managed to fit! You could also just put in 12 and I’m sure they will still be delicious 🙂

    Thats once crazy landlord i would of gave her a can and said if you recycle this its worth 5 cents LOL……I have a bad landlord too, Theres only 20 units in my apartments and shes the only one that gets the cops called on her and its her or her boyfriend whos doing the calling plus shes kissed almost every adult living here. i thought the landlords are suppose to be the drama free ones…… not where i live LOL. Oh and this looks yummy gonna make them for my daughters kinder graduation on friday ill let you know how that goes!

    I loved your story…I’d would suggest just giving her a roll of pennies with the rent next time and tell her to apply it each month. Why doesn’t she just give you a penny off the rent? I can’t believe Smarter Thanyoo’s comment. I wonder why they are reading your blog and felt compelled to make a comment like that since that is clearly not the tone of your blog. I’m sure that person doesn’t have any friends because you just don’t treat people like that…even in cyberspace!

    So, found your recipe a few weeks ago and I have made at least five pans of these delightful goodies – but double size pans! I saw that you made in an 8×8 and that just wasn’t big enough for me – so 9×13. I made the first time to take to church for our preschool volunteers. I have shared the recipe many times already and everyone LOVES them! Thanks so much for sharing this wonderful treat. I think you need to get royalties from Reese’s!       Hey Shelly, I’m not sure how the fluff would hold up in the freezer, as I’ve never frozen them! Might be worth a try but I wouldn’t want them to be ruined for your party. Hopefully you can find a little bit of time later in the week 🙂

        I had to put the last few of these in the freezer because I was eating too many:)! I just let them sit out for a little while before eating them and they were still delicious. They still only lasted maybe a week:)

        Also, for those wanting to measure the Marshmallow Fluff what you need is a Measure-All Cup from Pampered Chef! IT is perfect for measuring sticky things because you adjust it to the right amount, fill the cup and push it out into your bowl or pan. It is hard to describe. Look it up on my website. I even doubled the recipe and made it in my Large Bar Pan (stoneware) this weekend for church and everyone loved it!!

    our last place Used to get all pissy with us too. Instead of telling me this is what your rent is , I got a whole mathematical equation. Well, I was pregnant and had an 8 month old so math wasn’t my top skill.
    She wrote it on a post it

    When you get your water bill add that in
    Subtract ______ amount that we pay for you
    Add the $20 pet rent

    It was way too much for my pregnant brain to deal with

      Personally I think they just get better with age. Not sure if I would put them in the fridge before cutting though – if it’s not too warm in your house I’d say leave them at room temp!

    LOL. That sounds all too familiar! I once had a landlord who:

    A) Told us to deal with it because they were cold too when our heat was broken (this was also in Boston, so you know how it is).

    B) Complained our music was so loud that we couldn’t even here them knocking when they came down to complain (too bad we weren’t home and there was NO music on).

    C) Told my roommate she should not go outside to have a cigarette after dark because people might “get the wrong idea.”

    Do you have any tips or tricks for food presentation? Not just for the s’mores, but just in general?

      The bars are super crumbly and gooey, so I can totally understand how they could start to look like a hot mess! For the s’mores bars in particular, I put them in the fridge a half hour before cutting them, and I used a really large, sharp knife.

      For food presentation in general, play around with it! I take about a million photos from different angles before I find one I really like. Use leftover ingredients as props, try out different backgrounds (I personally like a wooden cutting board with a fancy napkin or pop of color), and try different arrangements. I also go to food blogs with really GREAT photos and note how they style their food. Have fun with it!

        Also, my landlady is a complete and total WITCH. We’re actually not allowed to change the locks, or refuse to let her into our apartment at any given time. I’ve woken up to the sound of my front door opening, walked out into my living room (in a tshirt and underwear, because that’s what I sleep in), to find her and her two “maintenance men” standing there, inspecting my apartment! She didn’t even warn us that she was coming over, and just walked right in. Talk about EMBARASSING!! So I share your love for sweets, AND your evil old landlady issue, as well!! Haha!

        Please consult an attorney or a magistrate judge. She can not legally do this! You pay the rent, therefore it is yours! She can come with 24 hour (at least) notice to your and yours. Next time, come out of your bedroom with a gun and tell her, “Gee, I almost shot you! I thought you were a burglar!” This may make her rethink her position. Because, next time, it may be a real burglar!!!!
        Please let me know how you handle this. What state do you live in? Please check the laws there. You can do this over the computer.

    Cant wait to make these! A tip: if you spray the measuring cup with any oil spray (like Pam) the marshmallow fluff will come right out. Works with honey, too. And for peanut butter, just rinse the cup under VERY hot water before measuring and the peanut butter will slide right out!


    Goodness its great to see that I am not the only one thats dealt with a crazy landlord. I lived in an apartment (shed converted into a crappy apartment) for 18 months….15 months in I wake up to my landlord putting boards on my windows and doors and would not allow me out, but he could enter…from the hidden door in the closet that I never knew about. He disconnected the net, phone line and all that..thank god I had a cell, called my family and the cops.

    These beautiful things are in my oven right now. Though I’m worried I screwed up. The dough wasn’t doughy at all, I had to spoon it on the top and spread it out.     I can not WAIT to try these!!! I LOVE P.B. cups and Fluff (ie: fluffernutter NUT here!) so these seem like they are heaven-sent!!!
    Also, as a “building manager” for my mother’s rental properties…”Smarterthanyoo” is technically right about not paying full rent being an evict-able offense but come ON…..I’m just happy when the tenants don’t try to short us in the HUNDREDS!!! I, personally, would let a penny slide…unless I didn’t like you, then I might mention it (but nicely)! LOL

      You used to be able to get Marshmallow fluff in jars when I lived in the uk 5 years ago. I think Sainsbury’s used to sell it either in the peanut butter aisle or near the baking stuff…. and the peanut cups I’d never had before until today (i’m in Oz and one of the shops is selling them as a special this week, along with the fluff-result!). I think if you melted some milk choc and put a thin layer of it into a silcon mould, then layered with smooth peanut, then coated again with choc (sounds like a lot of work, but it probably wouldn’t be) you’d be about there! I’m gonna give them a whirl this weekend! Can’t wait!

        Peanut butter cups are super easy to make. And have far less salt than Reese’s and while I’m totally addicted to Reese’s and have zero willpower, I actually prefer these homemade ones Probably too big for this recipe though so I’d make them in a mini muffin tin to accommodate the s’mores bars.

I love your blog. I have only just discovered it and I was laughing my head off, we are lucky not to have many crazy landladies here!     I made these a few weeks ago and they were awesome. Only, I am lazy and did not want to roll out the dough for the top, so I just kind of squished it into little pieces with my hands and puzzle pieced them around. My laziness actually payed off, as the marshmallow fluff that was left exposed got all toasty and slightly brown like when you toast marshmallows over a fire! I have another batch in the oven right now, only this time I used Heath bars because they are my sisters favorite. Also, I solved the measuring marshmallow fluff problem; I just used the entire jar! It looked like it was going to pouf up out of the pan, but it just made it. 😀

    I made these over the weekend and thought they were nearly the best thing I ever had! I used a no-calorie sugar substitute (the cup-for-cup equivalent Splenda) and also used 25 dark chocolate miniature Reese’s peanut butter cups instead of the 16 regular-sized ones. That way I was able to cut into 25 (5 rows across, 5 down) bars with a pb cup inside each one. SO good! I used cinnamon graham crackers because they were the only ones I had on hand. One more note: I bought a 7 oz container of the marshmallow fluff, and that seemed to be a really good amount — no need to mess up a measuring cup, just use the whole container!

    I would think t that the landlady would be toast if you and your felllow tenants got together to report her nasty behavior regarding repairs and emergencies. I’m certain there is a rental board in your area. I found the link to your blog in this month’s issue of the Ladies Home Journal and the picture alone got me to look you up. I’m making a batch tomorrow and plan to take them with me on my trip to see my son and his family in Utah. I just know they’ll be the talk of town. (It’s a small town!) 🙂 Will let you know how it all turns out. Now back to that witcheroo I would always include a picture of these or other goodies you’ve prepared, with the rent money, and really drive her wild.

      The only problem I can think of is that the fluff might ooze out during shipping. That being said, they’d still taste delicious 🙂 I’d say if you send them in a single layer and really pack ’em in tight, you should be good to go!

    Well the confection went to Utah where it was greated with unmitagated pleasure by all! They were not, as I suggested, divided with half of them saved for a rainy day! They were gobbled by my son and daughter-in-law and meted in small portions to my 4 year-old grand-twins. (Sugar high warning). They were gone by morning! 🙂
    Now I’m home and baking another batch soon for postal delivery and then, the recipe as well as your entertaining site forwarded online. Thanks and keep on baking!

    These are amazing – I changed the recipe slightly, because I love actually marsh mallows – I used the stackers which are flat. Also, I made half the pan plain chocolate and half with peanut butter cups (for those crazy people in my house that don;t like peanut butter cups.) I had some difficulty with the top crust. I used a flat insert from one of my square pans, but I had to place it in the freezer in order to sticken the crust so I could remove it to top the desert. Thanks for sharing and also enjoyed the “rant and rave” been there done that – I’m a New Englander living in the South, so I enjoy an occasional good old “Rant and Rave:!!!

After 2 years of him yelling at us, one day my mom took him a plate of cookies. Changed him completely. He became a friend and even taught us how to fish in the neighborhood lake.     I made these last night, brilliant! I made one change however. Instead of spreading out the remaining dough and laying it on top, I dolloped. This made some of the marshmallow on top. It hardened and was beyond delicious! It made it even more s’more like! Thanks for the recipe!

    These are are getting made this weekend. Now I know where all my left over halloween PB cups are going.

    Seriously is reallly is a right-of-passage to have a crazy landlord. In college I lived in a house built in the 1920s with clay pipes. One day our plumbing backup into our basement and the landlord wanted to be there with the plumbers. The whole time the plumbers were working the landlord was screaming at my roommates and I for causing this whole messy by…wait for it…”shoving whole chickens down the sink.” What? The plumbers looked at us like “wtf?” and said that there were no chickens being shoved down the sink because we would see the remains coming back up as they snaked the pipes. But he just wouldn’t believe them….from then on we were always mumbled after as “those sluts who keep putting god***n chickens down the drains…” everytime he’d come by to “check on us”. lol, you can’t even make this stuff up.

    Sweet delicious good god! These have to be one of the most incredible things I have ever put into my mouth. I am not much of a sweets eater but the other night I did a little stress baking. It just so happened that due to Halloween treats I had everything that I needed to make these in the house (I normally don’t stock marshmallow fluff or peanut butter cups but it seems it was meant to be). I whipped these up… SO easy & quick to put together… popped them in the oven and 30 minutes later my stress melted away. Yes… I did not let them cool. I ate them piping hot, right out of the oven. The marshmallow gooed everywhere but it was awesome! I recommend trying it this way. I also recommend trying them after they cool and become firm because they are amazing then too. I also recommend sticking one in the microwave for a few seconds to soften it up if you are so inclined. Hey… they are good anyway you choose to eat them. And a little goes a long way so its a good sweet treat to satisfy a craving without needing to eat the whole pan (not that eating a whole pan in one sitting would be a bad thing). I think this may have just turned me into a sweets eater. Thanks for the recipe!

    Made 12/04/12. This right here may be the winning recipe for the year. Ah-may-zing! I seriously could have eaten the whole pan by myself. Used about 2/3 of a 7 oz jar of marshmallow flow- should have used the whole thing. Baked them for 25 minutes. Came out beautiful!

    oh my…. I plan on making your delicious recipe tomorrow….. can’t wait. peanut butter cups are my husband’s favorite….. as far as the landlady? yes… your story was funny….but honestly? I have been a home health care RN as well as an RN working with the elderly in the hospital for years. more often than not…if an elderly person is mean…? they are unhappy. they are scraping by. they are lonely. they are ill. they are in pain. to this day it shocks me how some of our older folks are making it on there own….. my recommendation to you my dear young pastry chef? is to kill her with kindness. bake for her…offer her things…offer her help.. what may develop is a friendship you will never forget. the receiving you get will be way more valuable … than the giving …..

    Maybe somebody has already noted this (no time to read ALL the comments right now), but I find that the 7 oz jar of marshmallow fluff works out just right for these. Also, I make them with 25 mini Reese’s peanut butter cups (5 across and 5 down in the pan) and cut them so that each bar has one cup. I have made them twice now, and THESE ARE SERIOUSLY AWESOME!!!!
